‘Tis the season

We have a limited amount of “Erik of Norway” recipe books for sale! These make great gifts for only $10 and proceeds benefit the Alliance for the Great Lakes. “A collection of our Favorite Recipes” includes over 200 recipes contributed by our staff members. Our book contains delicious recipes from appetizers and soups to main dishes and desserts. These are tried and true recipes that would be great to make at your next get together!

Here is a sample of one of the recipes, which is a delightful fall treat!

Iced Pumpkin Cookies (Found on page 110)
Ingredients: 2  1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg 
1 tsp. vanilla extract 
2 cups confectioners’ sugar
3 T. milk
1 T. melted butter
1 tsp vanilla extract

Directions: Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves and salt; set aside. In medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin,  egg and 1 teaspoon vanilla extract to butter mixture; beat until creamy. Mix in dry ingredients. Drop onto cookie sheet by tablespoonfuls; flatten slightly. Bake for 15-20 minutes. Cool cookies, then drizzle glaze with fork. To make glaze, combine confectioner’s sugar, milk, 1 tablespoon melted butter and 1 teaspoon vanilla. Add milk as needed to achieve drizzling consistency. Cookies will stay fresh for up to three days in an airtight container.
